Use a single espresso with the rest of the glass filled up with steamed milk, and topped off with a thin layer of foam from the steamed milk. Sprinkle ground cinnamon, nutmeg, or sweetened chocolate powder on top, if desired. You can also add almond, rum, brandy, mint, or vanilla extract to taste.
For a Double Cafe Latte, use a double espresso instead of a single.
